For Dumonceaux, he says people today want healthy food that is more natural and less processed, and fits in with the latest trends, such as gluten- free options. “We really spend a lot of time thinking about and creating menus that make sense for today’s health consciousness and we’re very big with fair-trade products,” he says. The technology available in today’s kitchens has also changed drastically in the past 10 years, allowing the meal providers to up their games substantially, says Dumonceaux. “The types of ovens and cooking equipment today allow us the ability to do things like a sous-vide style or presentation where we can infuse lots of flavours into these foods, so because something is gluten-free or a healthier option, it doesn’t mean it’s going to be bland,” he says. “Our culinary team is very adept at staying ahead of the trends and looking for different ways we can prepare foods. We do have a couple of toys in the kitchen that allow our team to be really creative.” One example he cites are ovens that allow them to do Southern barbeque food (with the smoke, of course). “I wish I had that 20 years ago,” says Dumonceaux. One reason for holding a corporate function at a casino is also the most obvious one — the on-site gambling facilities – but today’s casinos offer more than that and should be considered by event planners even if gambling isn’t a reason. Besides top-notch infrastructure, today’s multi-dimensional facilities mean that attending corporate functions at casinos might be better described as being like attending a corporate function at a resort. For corporate event planners, the ease of dealing with one provider simplifies the planning process, but also helps reduce costs borne by organizations and the people attending the functions. The success of corporate events and meetings being held at a casino property isn’t a game of chance today. These days, it’s more of a sure thing. You can bet on it.
